Potato Leek Latkes

Latkes are essentially delightful little potato pancakes that you can enjoy in the morning (or any time in the day really!) Traditional latkes are made with potatoes and onion. However, this dressed up latke recipe calls for leeks; the leeks add a subtle sweetness. Enjoy!


  • 2 medium potatoes from Growing Solutions Farm

  • 3 leeks from Growing Solutions Farm

  • ¼ cup all-purpose flour

  • ½ teaspoons salt

  • Canola oil, for frying


  1. Mix together the potatoes, leeks, flour, and salt in a large bowl. Set aside for 10 minutes.

  2. Pour about ¼ inch of canola oil into a medium-sized skillet and place over medium-low heat.

  3. Make one latke by spooning the batter into the skillet and pressing it down evenly in the pan. Fry for 10 to 15 minutes per side, or until cooked through and crispy on the outside.

  4. Let cool slightly. Serve with plain greek yogurt, sour cream, or apple sauce. Enjoy!
